All Choppn' Knives are hand sharpened using a traditional Japanese technique known as the Honbazuke Method. This tradtional Japanese method gives every Choppn' Knives blade its incomparable sharpness.
The Honbazuke Method involves a 3-Stage complex sharpening process done entirely by hand and finished to a mirror polish. The blade is first coarsely ground using a vertically rotating sharpening stone, followed by a fine honing using a horizontally rotating sharpening stone. The edge is then polished using a leather stropping block for scalpel-like sharpness.
